Tomatoes, watermelon and basil on skewers topcook.tomathouse.com
Ingredients:
- 1/4 cup balsamic vinegar
- 1/4 cup sugar
- 1 watermelon weighing 1.8-2.2 kg, cut into 32 cubes of 4 cm in size.
- 32 small basil leaves (or tear large ones)
- 16 cherry tomatoes, halved
- 2 tbsp. l. olive oil
- Special equipment: 16 skewers, 15 cm long.
Preparation:
- In a small saucepan, combine the balsamic vinegar and sugar and heat over medium heat. Bring to a boil, stirring occasionally, until the sugar dissolves. Turn off the heat and set aside to cool.
- Thread a watermelon cube onto a skewer, pulling it to the very tip. Then thread a basil leaf onto the skewer, followed by a tomato half. Next, thread another watermelon cube, a basil leaf, and a tomato half. Place the skewer on a plate so it stands upright on the base of the first watermelon cube. Assemble the remaining skewers in the same manner.
- Drizzle the skewers with the prepared balsamic syrup and olive oil. Sprinkle with coarse salt. Serve.
