Chicken shashlik with pineapple topcook.tomathouse.com
Ingredients:
- 1 cup ketchup
- 1/4 cup soy sauce
- 1/4 cup honey
- 1 tbsp mild yellow mustard
- 1/4 cup light brown sugar
- 2 cloves of garlic
- Juice of 1 lemon
- 8 chicken thighs, boneless and skinless
- 1 fresh pineapple
- Olive oil, for grilling
- Coarse salt and freshly ground pepper
Preparation:
- Combine ketchup, soy sauce, honey, mustard, brown sugar, garlic, and lemon juice in a saucepan. Bring to a boil and simmer until the sauce thickens, about 10 minutes. Cool, then discard the garlic.
- Cut each chicken thigh in half. Peel and core the pineapple; cut into 2.5 cm cubes. Thread the chicken, alternating with the pineapple, onto wooden skewers. Brush the kebabs with olive oil and sprinkle with salt and pepper. Drizzle a little sauce over the top.
- Preheat the grill to medium. Grill the kebabs, turning and basting with additional sauce, for 10-12 minutes, until cooked through. Serve with the remaining sauce.
