Ingredients:
- 4 large sweet potatoes (about 1.5 kg), peeled and cut into 2.5 cm cubes.
- 0.5 cup mayonnaise
- 0.5 cup plain Greek yogurt
- 0.5 cups green onions, diced (about 6 pcs.)
- 1 red bell pepper, finely diced
- 2 tbsp chopped chives
- 1 - 2 tsp orange zest
- 2 teaspoons apple cider vinegar
- 0.5 tsp hot sauce, such as Tabasco
Preparation:
- Place the sweet potatoes in a large saucepan, cover with water, and place over high heat. Add 2 teaspoons of salt and bring to a boil. Cook until tender, about 5 minutes. Then drain and let the sweet potatoes cool for 15-20 minutes.
- Meanwhile, in a medium bowl, combine mayonnaise, yogurt, green onions, bell peppers, chives, orange zest, vinegar, and hot sauce.
- Add the cooled sweet potatoes and toss gently to coat completely. Season with salt and pepper to taste. Chill in the refrigerator and serve.
