Grilled Onions in Bourbon Sauce

Ingredients:

  • 2 large sweet onions, such as Vidalia, sliced ​​into 1-2 cm thick rounds.
  • Vegetable oil to grease the onions
  • 0.5 cups bourbon
  • 2 tbsp. ketchup
  • 1 tbsp dark brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tbsp balsamic vinegar

Preparation:

  1. Preheat the grill to medium-high heat. Brush the onions with vegetable oil on both sides and season with salt and black pepper. Grill, covered and turning occasionally, until tender and crispy, 15 to 20 minutes; chop coarsely.
  2. Combine the bourbon, ketchup, brown sugar, and Worcestershire sauce in a large skillet. Cook over medium-high heat until the sauce thickens and the alcohol evaporates, about 3 minutes. Add the balsamic vinegar and onions. Season with salt and pepper to taste. Serve the onions warm or at room temperature.
