Pickled shallots with red onions

Ingredients:

  • 1 small red onion, thinly sliced
  • 1 shallot, thinly sliced
  • 0.5 cups distilled white vinegar
  • 2 tablespoons of sugar

Preparation:

  1. In a small saucepan, combine vinegar, sugar, and 1 teaspoon of salt with 0.5 cups of water. Bring to a boil over medium-high heat.
  2. Place the red onion and shallot in a 0.5-liter jar and pour the marinade over it. Let it cool completely for an hour. Serve as a topping for sandwiches, sprinkle on a dish, or add to a salad. Store in the refrigerator for up to 1 week.
