Blueberry Crisp with Oatmeal

Ingredients:

    Filling

  • 6 cups blueberries
  • 0.5 cup granulated sugar
  • 3 tbsp. flour
  • 2 tablespoons freshly squeezed lemon juice
  • A pinch of coarse salt
  • Unsalted butter, to grease the pan

    Topping

  • 3/4 cup brown sugar
  • 3/4 cup premium flour
  • 0.5 cups oatmeal
  • 0.5 cup chopped almonds or hazelnuts
  • 0.5 tsp. grated lemon zest
  • 1/4 tsp ground cinnamon
  • 0.5 tsp coarse salt
  • 6 tablespoons chilled unsalted butter, cut into 1cm pieces

Preparation:

  1. Preheat the oven to 190°C (375°F) and grease a 2-quart (2-liter) baking dish. Prepare the filling. In a medium bowl, combine the blueberries, granulated sugar, flour, lemon juice, and salt. Transfer to the prepared baking dish.
  2. In a separate bowl, combine brown sugar, flour, oats, nuts, lemon zest, cinnamon, and salt. Using your fingers or a pastry blender, blend the butter into the flour mixture until coarse crumbs form. Sprinkle over the blueberry mixture.
  3. Place the pan on a baking sheet and bake until the topping is golden brown and the filling is bubbling, 45-50 minutes. Let cool slightly and serve.
