Apple Mulled Wine Cocktail

Ingredients:

  • 1 liter of apple cider (unfiltered apple juice without sugar)
  • 3 cinnamon sticks
  • 1 piece fresh ginger root, crushed
  • 3 cloves
  • A pinch of nutmeg
  • 1 firm red apple (Fuji, Gala, etc.), cut into small cubes
  • 1 firm green apple (such as Granny Smith), diced into small cubes
  • Juice of 2 lemons
  • 1/4 cup sugar
  • 1 bottle (750 ml) of dry sparkling wine Cava

Preparation:

  1. Combine the apple juice, cinnamon sticks, ginger, cloves, and nutmeg in a saucepan and heat over medium heat. Bring to a boil, then reduce the heat to low and simmer until the liquid has reduced by half, about 30 minutes. Set aside to cool, then strain.
  2. In a large bowl, combine the apples, lemon juice, and sugar. Place in a saucepan with the apple juice and refrigerate. When ready to serve, fill champagne flutes about halfway with the apple juice mixture and top with sparkling wine. Stir and serve.
