Ingredients:
- 2 tbsp (30 g) unsalted butter
- 2 sheets of frozen puff pastry, defrosted (one 500g package)
- 3 tbsp. wheat flour, plus extra for sprinkling
- 1 large egg
- 1/2 cup sugar
- 1/4 tsp ground allspice
- 2 tsp vanilla extract
- 1/2 tsp finely grated lemon zest
- 2 tsp freshly squeezed lemon juice
- 2.5 cups cherries (about 450 g), pitted and halved
- 2 ripe peaches, peeled, pitted and cut into 1.5cm thick slices.
Preparation:
- Preheat oven to 230°C (430°F). Grease a baking sheet with 1 tbsp (15g) butter. Place 1 sheet of dough on a floured work surface. Beat an egg with 1 tbsp of water and spread the dough over it. Place another sheet of dough on top and press with a rolling pin, then roll out into a 35cm (14in) square.
Place the dough on the prepared baking sheet and chill until firm, about 30 minutes. (Keep the remaining egg mixture in a cool place; you'll need it later to brush the dough.)
- In a large bowl, combine sugar, allspice, vanilla, lemon zest, and lemon juice. Transfer 2 tablespoons of the mixture to a small bowl and set aside for garnishing. Add the cherries, peaches, and 3 tablespoons of flour to the remaining mixture and stir to combine.
- Using a pizza cutter or sharp knife, trim the edges of the dough to form a 12-inch (30-cm) circle. Spoon the cherry mixture into the center, leaving a 2-inch (5-cm) border. Cut the remaining 1 tablespoon (15 g) butter into small pieces and sprinkle on top. Fold the edges of the dough over the filling, pleating them if desired.
- Bake the galette in the lower part of the oven until risen and golden brown, about 20 minutes. Reduce the temperature to 180°C.
Remove the galette from the oven, brush the edges with the remaining egg mixture, and sprinkle with the remaining sugar mixture. Return the galette to the oven and continue baking until the juices thicken, another 30 to 45 minutes (depending on the juiciness of the cherries). Remove from the oven and cool for 10 minutes to allow the filling to set.
