Bruschetta with burrata cheese and strawberries topcook.tomathouse.com
Ingredients:
- 15 slices of baguette, 0.5 cm thick.
- 4 tablespoons extra-virgin olive oil
- 1 tbsp white balsamic vinegar
- 1 teaspoon clover honey
- 0.5 cup cherry tomatoes, quartered
- 3/4 cup chopped strawberries
- 1 tbsp chopped fresh basil
- 1 ball (200 g) burrata cheese, chilled
Preparation:
- Preheat oven to 200°C.
- Brush both sides of baguette slices with 2 tablespoons of olive oil. Place the slices on a rimmed baking sheet and sprinkle with 0.5 teaspoon of salt. Bake for 10 minutes, rotating the baking sheet halfway through.
- In a medium bowl, combine the vinegar, honey, 1/2 teaspoon salt, and the remaining 2 tablespoons olive oil; whisk until smooth. Add the cherry tomatoes, strawberries, and basil to the dressing; toss well to coat. Let sit at room temperature for 10 minutes to allow the flavors to meld.
- Drain the burrata and pat it dry. Use a fork to tear it into small pieces. Place a small amount of burrata on each slice of toast, ensuring the creamy center is evenly distributed. Top with a small amount of the tomato-strawberry mixture and drizzle with a little dressing.
