Excellent basmati rice

Ingredients:

  • 1 tbsp. basmati rice
  • 1 and 3/4 cups water
  • A large pinch of salt

Preparation:

  1. This is the most important part: rinse the rice! Place the rice in a large bowl and cover with clean, room-temperature water. Run your hand through the water and rice; the water will become cloudy. This is all the starch we need to remove so the rice is fluffy, not sticky, like in Chinese and Japanese cuisine.   2. After rinsing the rice by hand for about a minute, drain the water, being careful not to spill the rice. Repeat this process until the water runs clear. Three to four times is usually sufficient.
  3. Fill the bowl again with water and soak the rice for 30 minutes.
  4. After 30 minutes, drain the water. Pour 1 3/4 cups of water into a medium saucepan, add a pinch of salt, and bring to a boil.
  5. Add the rice, stir, and wait until the water returns to a full boil. Then reduce the heat to low and cover the pan with a lid. Cook the rice for 15 minutes.
  6. After 15 minutes, turn off the heat. Let the rice sit for 5 minutes. Fluff it with a fork; you'll see that each grain of rice has become slightly longer and is fluffy throughout. Excellent results!
