Simple Danish Cream Cheese Puffs

topcook.tomathouse.com

Ingredients:

  • 1 package (500g) frozen puff pastry, thawed
  • 1 large egg + 1 yolk
  • 220 g cream cheese, softened
  • 3 tbsp sugar + extra for sprinkling
  • 1 teaspoon lemon juice
  • 1/4 tsp vanilla extract

Preparation:

  1. Preheat oven to 200°C. Line 2 baking sheets with parchment paper.
  2. In a small bowl, beat the egg with 1 teaspoon water; set aside.
  3. In a medium bowl, beat the egg yolk, cream cheese, sugar, lemon juice, and vanilla extract with a mixer on medium speed until smooth.
  4. Place 2 sheets of puff pastry on a work surface and cut each into 4 squares. Fold the corners of the squares inward about 2 cm to form an octagon. Spoon the cheese mixture evenly into the center of each octagon (about 2 tablespoons); do not spread it. Brush the exposed areas of the dough with the egg mixture and sprinkle generously with sugar.
  5. Bake until the buns are puffy and golden brown, about 18 minutes. Cool slightly before serving.
