Ingredients:
Cocktail
- 2 cups crushed ice + extra for chilling the glass
- 60 ml light rum
- 30 ml freshly squeezed lime juice, strained
- 15 ml simple sugar syrup, see recipe below
Simple sugar syrup
- 2 tbsp. sugar
- 1 cup of water
Preparation:
- If your glass isn't chilled, chill it by filling it with a little crushed ice. Set it aside while you prepare the cocktail.
- Place 2 cups of crushed ice in a cocktail shaker. Pour rum, lime juice, and simple syrup over the ice, cover, and shake well.
- Remove the ice from the glass and strain the cocktail into it. Serve immediately.
Simple sugar syrup:
Combine the sugar and water in a small saucepan and heat over high heat. Bring to a boil. Reduce the heat to medium and simmer, stirring occasionally, until the sugar is completely dissolved, about 3-5 minutes. Remove from heat and let cool completely. The syrup can be stored in an airtight container in the refrigerator for up to a month.. Exit: 3 tbsp.
