Penne pasta with fresh tomato sauce

Ingredients:

  • 340 g of penne pasta
  • 1/4 cup extra virgin olive oil
  • 6 tomatoes, diced
  • 3 tablespoons balsamic vinegar
  • 3 cloves garlic, crushed
  • Fresh basil, chopped
  • Grated Parmesan

Preparation:

  1. Cook the penne pasta in a large pot of boiling salted water according to package directions. In a large bowl, combine the tomatoes, garlic, olive oil, and vinegar. Stir in the basil. Drain the pasta, transfer it to a bowl, and toss to coat with the tomato sauce. Serve sprinkled with Parmesan cheese.
