Fried wings in tequila-lime sauce with spicy avocado sour cream

Ingredients:

    Chicken wings

  • 1.1 kg chicken wings, cut
  • 3 tbsp. l. rapeseed oil (canola)
  • 1 tbsp + 0.5 tsp coarse salt
  • 0.5 tsp ground black pepper
  • 3 tablespoons chopped red onion (about 1/4)
  • 1 tablespoon finely chopped jalapeno pepper, seeded (about 1/4)
  • 2 tsp. minced garlic (about 2 cloves)
  • 1/4 tsp ground cumin
  • 1/4 tsp ground coriander
  • 0.5 tbsp. tequila blanco
  • 1/4 cup lime juice (2 - 3 limes)
  • 2 tablespoons chipotle hot sauce
  • 1 tbsp light agave syrup or honey
  • 1 tbsp unsalted butter
  • 1 tbsp chopped fresh cilantro

    Spicy sour cream with avocado

  • 3/4 cup sour cream
  • 1/4 cup fresh cilantro
  • 2 tbsp lime juice (about 1 pc.)
  • 1.5 tsp chipotle hot sauce
  • 0.5 tsp crushed garlic (about 1 small clove)
  • 1 small or 1/2 large ripe avocado, diced (about 3/4 cup)
  • 1/2 large jalapeño, seeded and finely chopped (about 2 tablespoons)

Preparation:

  1. Position the oven rack in the upper third of the oven. Preheat the oven to 230°C. Line a baking sheet with foil.
  2. Place the chicken wings on the prepared baking sheet. Toss with 2 tablespoons of vegetable oil, 1 tablespoon of salt, and black pepper to taste. Bake until the wings are cooked through and just beginning to brown, about 25 minutes.
  3. Make the tequila lime sauce while the wings are baking..

    In a small saucepan, heat the remaining 1 tablespoon vegetable oil over medium heat. Add the red onion, jalapeño, and garlic and cook until softened, about 2 minutes. Sprinkle with the remaining 1/2 teaspoon salt. Add the cumin and coriander and cook until fragrant, another 1 minute. Add the tequila, lime juice, hot sauce, and agave syrup and bring to a simmer. Continue cooking until the sauce thickens and reduces slightly, about 5 minutes. Stir in the butter and cook the sauce for another 1 minute. Remove from heat.
  4. When the wings are cooked through and starting to brown, remove the baking sheet and set the oven to broil. Pour the sauce over the wings, toss to coat, and broil. Cook until crispy, 2-3 minutes per side.
  5. Sprinkle the finished wings with cilantro and serve immediately with spicy avocado sour cream.

    Place the sour cream, cilantro, lime juice, hot sauce, garlic, avocado, and jalapeño in a food processor and process until smooth. Season with salt. Transfer to a container, cover, and refrigerate. This can be prepared the day before serving.

    Note

    Both the wings and the spicy avocado sour cream are medium-spicy. You can adjust the heat by reducing the jalapeño or, conversely, leaving the jalapeño with the seeds.
