Ingredients:
- 1.8 kg frozen diced potatoes for frying
- 2 tablespoons butter
- 2 large green chili peppers, diced
- 2 jalapeños, finely diced
- 1 poblano pod, diced
- 2 onions, diced
- 2 cups grated sharp cheddar
- 2 cups grated Monterey Jack cheese
- 8 slices bacon, fried and chopped
Preparation:
- Preheat oven to 190°C.
- Melt the butter in a large skillet and sauté the chili peppers and onion until golden brown and almost blackened. Add the frozen potatoes, a little salt and black pepper, and stir.
- Transfer to a greased baking dish and sprinkle with cheese and bacon. Bake until the potatoes are heated through and the cheese is bubbly, about 30 minutes.
