Ingredients:
- 4 cups strawberries, hulled and thinly sliced
- 2 tablespoons orange juice
- 0.5 cups of sugar
- 2 cups heavy cream, very chilled
- 1 tbsp. honey
- 1 teaspoon of sugar
- 0.5 tsp vanilla extract
- 8 whole grain cinnamon graham crackers, broken into strips
Preparation:
- In a bowl, combine strawberries, orange juice, and sugar. Let sit at room temperature for 30 minutes, shaking several times.
- Whipped cream:
In a large bowl, beat the heavy cream until soft peaks form. Add the honey, sugar, and vanilla extract. Continue beating until moderately stiff peaks form.
- Remove the strawberries from the bowl with a slotted spoon and add them to the whipped cream. Using a rubber spatula, gently fold the strawberries into the whipped cream. Divide among glasses or bowls and serve with whole grain graham crackers, crumbled on top, or using graham cracker slices instead of spoons.
