Healthy Blueberry Oatmeal Ice Cream topcook.tomathouse.com
Ingredients:
- 2 cups blueberries
- 2/3 cup unsweetened hazelnut milk
- 1/4 cup oatmeal
- 3 tablespoons of honey
- 2 tbsp. blueberry jam
- Juice of half a lemon
- Special equipment: 6 popsicle molds with a capacity of 80-120 ml.
Preparation:
- Place blueberries, nut milk, oats, honey, jam, lemon juice and a pinch of salt in the jar of a blender and blend until smooth.
- Divide the mixture evenly among six 90-120 ml ice cream molds. Freeze until the ice cream is completely set, at least 8 hours, but preferably overnight.
- Let the ice cream sit at room temperature for a few minutes, then remove the molds. Ice cream can be stored in the freezer for up to 2 weeks..
