Ingredients:
- 1 whole chicken, cut in half
- 1 teaspoon of salt
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon garlic salt
- 1 teaspoon black pepper
- 1 teaspoon crushed red pepper flakes
- 1/4 tsp cayenne pepper
- 0.5 tsp dried thyme
- 0.5 tsp dried oregano
- 2 tbsp. l. brown sugar
- Apple wood chips for smoking, as needed
Preparation:
- In a medium bowl, combine the dry ingredients. Rub the spice mixture over both chicken halves. Cover the chicken with plastic wrap and refrigerate for 1 hour.
- Place the applewood chips in the smoker of your grill. If you don't have a smoker, you can make a foil roll with the chips, poke a few holes in the top with a fork, and place it directly on the hot coals.
- Place the chicken skin-side up on a hot grill. Smoke over wood chips for 1 hour and 20 minutes. Cover the chicken to ensure proper smoking. This will also prevent the wood chips from catching fire. After 30 minutes, flip the chicken over. The chicken should be done when the juices run clear near the bone.
