Gougères with bacon topcook.tomathouse.com
Ingredients:
- 1 cup flour
- 110 g chopped butter
- 4 eggs
- 6 slices of bacon
- 3/4 cup grated smoked Gouda
- 2 tbsp chopped chives
Preparation:
- Combine 1 cup water, 110g chopped butter, 0.5 tsp each coarse salt and black pepper in a saucepan and bring to a boil.
- Add 1 cup flour, reduce heat to low and cook, stirring, until dough pulls away from sides of pan and is shiny, about 3 minutes.
- Transfer the dough to the bowl of a stand mixer; beat in 4 eggs, one at a time, on medium speed until the dough comes together. Add 6 thinly sliced fried thick bacon, 3/4 cup grated smoked Gouda, and 2 tablespoons chopped chives.
- Transfer the dough to a pastry bag; snip off the corner. Pipe 1-tbsp mounds of dough onto 2 parchment-lined baking sheets. Sprinkle with additional smoked Gouda.
- Bake at 200°C until the gougères are puffed and golden brown, 25-30 minutes, rotating the baking sheets after 20 minutes.
