Roasted Beets with Orange Miso Glaze topcook.tomathouse.com
Ingredients:
- 900 g beets (about 7 pcs.), trimmed
- 3/4 cup freshly squeezed orange juice (2-3 pcs.)
- 2 tablespoons white miso paste
- 2.5 tsp sugar
- 2.5 tsp soy sauce
- 4 slices of ginger, 0.5 cm thick.
- 3 cloves garlic, crushed
- Chopped green onions, for serving
Preparation:
- Preheat oven to 200°C. Place beets in a large baking dish and add 1/3 cup water; cover the dish with foil.
- Bake, adding more water to the pan if it evaporates, until the beets are easily pierced with a knife, 50-60 minutes. Remove the foil and let the beets cool. Peel the beets and cut into 1-cm-thick wedges; transfer to a medium bowl.
- In a medium skillet, combine orange juice, miso paste, sugar, soy sauce, ginger, and garlic and heat over medium-high heat.
- Bring to a boil and simmer, stirring occasionally, until the sauce thickens and reduces to 1/4 cup, 8-10 minutes. Strain through a sieve and pour over the beets. Season with salt to taste and stir. Sprinkle with green onions.
