Ingredients:
Guacamole
- 4 ripe Hass avocados, peeled and cut into pieces
- Half a red onion, chopped
- 1 jalapeño, chopped
- Juice of 2 limes
- Salt and black pepper
- Chopped fresh coriander leaves, to taste
Tortillas with cumin
- 12 wheat or blue corn tortillas, quartered
- 1 tbsp. l. ground cumin
- 1 tbsp coarse salt
- Peanut oil, for frying
Preparation:
- In a deep skillet, heat 2 inches (5 cm) of peanut oil to 350°F (170°C) on a deep-fry thermometer.
- Mix all ingredients in a molcajete until you have a chunky guacamole. Season with salt and pepper to taste, and sprinkle with paprika and cilantro.
- Serve immediately with cumin tortilla chips.
Tortillas with cuminFry the tortillas, a few at a time, until lightly golden brown. Transfer to paper towels to drain excess oil, and immediately sprinkle with ground cumin and salt.
