Perfect smashed potatoes in the oven

Ingredients:

  • 800 g of small potatoes
  • 2 bay leaves

Preparation:

  1. Place 800g of small potatoes in a saucepan and cover with water. Add 2 bay leaves, 2 cloves of garlic, and a large pinch of salt; bring to a boil. Reduce heat and simmer until the potatoes are tender, 20-25 minutes.
  2. Drain the potatoes, discarding the bay leaf and garlic. Toss the potatoes with 2 tablespoons of olive oil, transfer to a baking sheet, and flatten with a spatula or measuring cup. Drizzle with olive oil and season with salt and black pepper.
  3. Grill in the oven, turning occasionally, until golden brown and crisp, 15 to 20 minutes.
