Mashed potatoes with yogurt and herbs

topcook.tomathouse.com

Ingredients:

  • 900 g potatoes, unpeeled
  • 1.5 cups natural yogurt
  • 110 g unsalted butter
  • 2 tbsp chopped fresh chives
  • 2 tbsp chopped fresh dill
  • 2 tbsp chopped fresh parsley

Preparation:

  1. Place the potatoes in a medium saucepan, cover with cold water, and add 2 tablespoons of salt. Bring to a boil and simmer, uncovered, until tender, about 45 minutes. Drain.
  2. Peel the potatoes and return them to the pan (if desired, puree them with a vegetable grinder or potato masher). Mash the potatoes with the yogurt and butter using a fork or potato masher. Add most of the chives, dill, parsley, and 2 teaspoons of salt; season with pepper to taste. Transfer the mashed potatoes to a serving platter and sprinkle with the remaining herbs.
