Slices with jam topcook.tomathouse.com
Ingredients:
- 2 cups premium flour
- 0.5 tsp baking powder
- 1/4 teaspoon salt
- 165 g unsalted butter, room temperature
- 0.5 cups of sugar
- 1 large egg
- 0.5 tsp vanilla extract
- 0.5 tsp finely grated lemon zest
- 4 - 6 tbsp. l. jam or confiture (any taste)
Preparation:
- Line 2 baking sheets with parchment paper. In a medium bowl, whisk together the flour, baking powder, and salt. In a large bowl, beat the butter and sugar with a mixer on medium-high speed until light and fluffy, 3-5 minutes. Beat in the egg, then the vanilla extract and lemon zest. Reduce the mixer speed to low, add the flour mixture, and knead until the dough forms a soft texture.
- Divide the dough into 4 pieces and place 2 pieces on each prepared baking sheet. Form each piece into a 30 x 2.5 cm log, approximately 8 cm apart. Using the handle of a wooden spoon or your finger, make a 1 cm deep groove down the center of each log. Refrigerate for 30 minutes.
- Position racks in the upper and lower thirds of the oven and preheat to 375°F (190°C). Bake, rotating the baking sheets halfway through, until golden brown, 20-25 minutes. Let cool completely on the baking sheets, then transfer to a cutting board and slice crosswise into 1-inch-wide slices.
