Pizza with kimchi and bacon

Ingredients:

  • 3.5 cups prepared kimchi
  • 1 ripe pear, peeled, cored and coarsely chopped (about 1/2 cup)
  • 8 slices bacon, cut into 1cm pieces.
  • 450 g of store-bought pizza dough
  • Premium flour for working with dough
  • 1 tbsp. l. + 1 tsp. dark sesame oil
  • 1 cup grated sharp cheddar
  • 1 tbsp. grated mozzarella
  • 2 tablespoons sesame seeds
  • 2 tablespoons thinly sliced ​​green onions, for serving

Preparation:

  1. Preheat oven to 230°C and position the rack on the bottom shelf of the oven.
  2. Place 2 cups of kimchi and the pear in a food processor. Blend until the kimchi is chunky. Drain the remaining kimchi into the food processor, then chop into bite-sized pieces.
  3. In a large skillet over medium heat, cook the bacon until crisp and most of the fat has rendered, 12 to 15 minutes.
  4. While the bacon is fryingRoll out the pizza dough. Cut a sheet of parchment paper to fit the back of an upside-down baking sheet. Place the baking sheet on the bottom rack of the oven. Lightly dust the parchment with flour. Divide the dough in half, then stretch or roll one piece directly onto the parchment paper into a 27cm (11in) circle.
  5. Once the bacon is crispyUsing a slotted spoon, transfer half of the bacon to a paper towel-lined plate to drain. Add the kimchi puree to the remaining bacon in the pan. Stir to distribute evenly. Bring to a boil over medium heat, then reduce the heat. Simmer, uncovered, until the sauce thickens slightly, stirring occasionally, about 5 minutes. Add 1 teaspoon of sesame oil. Season with salt and pepper to taste.
  6. To assemble one pizza, spread half the kimchi sauce on the crust, leaving a 1 cm border. Sprinkle half of both cheeses on top. Top with half of the chopped kimchi. Brush the crust with half of the remaining sesame oil and sprinkle with half of the sesame seeds.
  7. Carefully transfer the pizza to the preheated baking sheet. Bake until the crust is golden brown and the cheese is bubbly, 8-12 minutes. Remove from the oven. Let cool on the baking sheet for 5 minutes and serve. Top the pizza with half the remaining bacon and green onions.
  8. Repeat the same with the remaining ingredients to bake another pizza.
