Mango Smoothie with Coconut and Chia Seeds

Ingredients:

  • 1 teaspoon chia seeds
  • 0.5 cups low-fat coconut milk
  • 0.5 cup chopped peeled ripe mango (about a quarter of the fruit)
  • 1 tbsp. honey (optional)
  • 1 teaspoon freshly squeezed lime juice
  • 3/4 cup ice cubes

Preparation:

  1. In a small bowl, combine the chia seeds with coconut milk. Let sit for 30 minutes to allow the chia seeds to soften slightly.
  2. Combine the mango, 2 tablespoons cold water, honey (if using), lime juice, and ice cubes in a blender. Blend on high speed until very smooth. Add the chia seed and coconut milk mixture and blend; do not overmix to avoid breaking up the chia seeds. Add 1-2 tablespoons of cold water if needed if the smoothie is too thick.
