Toasts with sweet potato and za'atar spread

Ingredients:

  • 2 sweet potatoes
  • 1/4 cup tahini
  • 0.5 tsp cumin

Preparation:

  1. Microwave 2 sweet potatoes until tender, 10 to 12 minutes.
  2. Peel and puree the tahini in a food processor with 1/4 cup tahini, 2 tablespoons olive oil, the juice of half a lemon, 1 teaspoon coarse salt, 1/2 teaspoon cumin, and a pinch of cayenne pepper. Spread the purée on 4 slices of multigrain toast. Drizzle with olive oil and sprinkle with za'atar.
