Pumpkin seeds

Ingredients:

  • 1/2 cup seeds from about two medium butternut squash
  • 1 teaspoon extra-virgin olive oil
  • 1/4 teaspoon Cajun seasoning or salt-free seafood seasoning, such as Old Bay, optional

Preparation:

  1. Bring a large pot of salted water to a boil. Add the seeds and cook for 10 minutes. Drain and dry the seeds on a paper towel-lined baking sheet for 30–60 minutes.
  2. Preheat oven to 160°C.
  3. Dry the seeds again with a paper towel. Place them on a baking sheet and toss with oil, a little salt and Cajun seasoning, if using. Spread the seeds in a single layer. Bake, stirring every 5 minutes, until light golden brown, 15–17 minutes (you'll also hear them crisp in the oven). Let cool on the baking sheet.
