Ingredients:
- 1 baguette
- 2 large eggs
- 0.5 cups low-fat cream (10%)
- 3 tablespoons of sugar
- 1/4 cup dark rum
- 2 tablespoons unsalted butter
- 1/4 tbsp. maple syrup
- 2 cups rum raisin ice cream
Preparation:
- Preheat oven to 120°C (250°F). Slice the baguette diagonally into eight 1-cm-thick slices. In a large baking dish, combine the eggs with the cream, sugar, and 3 tablespoons of rum. Add the bread and soak, turning occasionally, for about 10 minutes. Remove the baguette before it becomes soggy.
- In a large nonstick skillet, melt 1 tablespoon of butter over medium heat. Add half of the bread and toast until golden brown and cooked through, about 4 minutes per side. Transfer to a baking sheet and keep in a warm oven. Add the remaining 1 tablespoon of butter to the skillet and toast the remaining bread.
- Meanwhile, combine the maple syrup with the remaining 1 tablespoon rum in a small bowl and microwave for about 1 minute. Serve the French toast with maple rum syrup and ice cream.
