Crispy Brussels Sprouts in Bacon Fat

Ingredients:

  • 450 g Brussels sprouts, ends trimmed
  • 1/4 cup bacon fat, strained

Preparation:

  1. Preheat oven to 200°C. Line a baking sheet with foil.
  2. Slice the Brussels sprouts lengthwise into thirds. It's okay if some of the outer leaves fall off. Don't throw them away; they'll roast beautifully in the oven. Transfer the Brussels sprouts to a bowl, add the rendered bacon fat, 3/4 teaspoon of salt, and 1/2 teaspoon of black pepper, and toss to combine. Arrange on the prepared baking sheet.
  3. Bake until the small pieces are crispy, about 20 minutes. Remove the baking sheet from the oven and transfer the crispy pieces to a serving platter. Using tongs, flip the remaining Brussels sprouts (turning them individually will ensure maximum crispness). Return the baking sheet to the oven and bake until all the sprouts are golden brown and crispy, another 5 to 10 minutes.
