Ingredients:
- 1 kg of potatoes
- 1 cup whole milk
- 110 g unsalted butter
- 1 cup grated cheddar
- 1/4 cup chopped fresh dill
Preparation:
- Place the potatoes in a medium saucepan, cover with cold water, and add 2 tablespoons of salt. Bring to a gentle simmer and cook, uncovered, until tender, about 45 minutes. Drain.
- Peel the potatoes and return them to the pan (for smoother mashed potatoes, press them through a potato masher or vegetable grinder after peeling). Using a fork or potato masher, mash the potatoes with the milk and butter. Add the cheddar, dill, 2 tablespoons of salt, and a pinch of freshly ground black pepper.
