Zucchini Chocolate Chip Bread

Ingredients:

  • 1/3 cup unsalted butter, melted and cooled slightly
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 zucchini weighing 200 g, grated (about 1.5 cups)
  • 1.5 cups premium flour
  • 0.5 cup light brown sugar
  • 0.5 cup granulated sugar
  • 0.5 tsp baking powder
  • 0.5 tsp of soda
  • 0.5 tsp coarse salt
  • 3/4 tbsp. semi-sweet chocolate granules
  • Cooking spray to spray

Preparation:

  1. Position the oven rack on the middle shelf and preheat the oven to 160°C.
  2. In a medium bowl, combine the butter, vegetable oil, vanilla, and eggs. Stir in the zucchini. In a large bowl, combine the flour, brown sugar, granulated sugar, baking powder, baking soda, and salt. Gently fold the flour mixture into the wet mixture and knead into a dough. Stir in the chocolate chips.
  3. Spray an 8x4-inch loaf pan with cooking spray, then spoon the batter into the pan, smoothing the surface with the back of a spoon. Bake, rotating the pan halfway through, until the top is golden brown and a toothpick inserted into the center comes out clean, 1 hour to 1 hour 20 minutes. Cool completely in the pan on a wire rack.
