Basic Mashed Potato Recipe

Ingredients:

  • 1 kg Russet-Burbank potatoes
  • 1 cup of hot milk
  • 50-100 g butter

Preparation:

  1. Place 1 kg (2.3 lb) whole, unpeeled Russet Burbank potatoes in a large saucepan and cover with cold water; season generously with salt. Bring to a gentle simmer and cook until the potatoes are tender, about 45 minutes. Drain, then peel the potatoes and return them to the saucepan; add 1 cup (1.5 oz) hot milk and 50–100 g (2–3 oz) room-temperature butter. Mash with a potato masher or fork (do not process in a food processor). Season with salt and pepper to taste.
