topcook.tomathouse.com

Ingredients:

  • 2 cups of milk
  • 0.5 cups of sugar
  • 1/3 cup cocoa powder
  • 4 tsp cornstarch
  • 1.5 tsp vanilla extract
  • 3 large egg yolks
  • 1/4 teaspoon fine salt
  • Chocolate shavings and sweet whipped cream for serving
  • Special equipment: 4-6 small ramekins or bowls

Preparation:

  1. Combine 1.5 cups milk, sugar, and cocoa powder in a medium saucepan. Bring to a boil over medium heat, stirring occasionally, until the sugar dissolves. Meanwhile, in a medium bowl, combine the remaining 1/2 cup milk with the cornstarch, vanilla, egg yolks, and salt. Gradually whisk the hot milk mixture into the egg mixture.
  2. Return the milk and egg mixture to the saucepan and continue cooking, whisking constantly, until the pudding comes to a boil. Reduce the heat to maintain a gentle simmer and continue stirring until the pudding thickens, about 2-3 minutes more.
  3. Divide the pudding evenly among 4-6 small ramekins or ramekins. Cover with plastic wrap and refrigerate until set, at least 4 hours or overnight. Serve the pudding, garnishing each serving with a dollop of whipped cream and chocolate shavings.
