Spicy pork tenderloin in the oven

Ingredients:

  • 1 pork tenderloin, trimmed of fat (about 700 g)
  • 1 tbsp. l. peanut butter
  • 2 tsp Chinese Five Spice Powder
  • 1 tbsp. l. rice vinegar
  • 1 teaspoon grated peeled ginger root
  • 1 teaspoon mirin
  • 1 teaspoon soy sauce
  • Juice of half a lime
  • 2 tsp. dark sesame oil
  • Boiled rice and broccoli, for serving

Preparation:

  1. Preheat the oven to broil and line a baking sheet with foil. Place the pork on the prepared baking sheet, brush with peanut oil, and sprinkle with five-spice seasoning. Season the pork with salt and pepper. Grill, turning once, until golden brown and an electronic meat thermometer inserted into the thickest part of the tenderloin registers 145°F (63°C), 15 to 20 minutes. Transfer the pork to a cutting board and let rest for 5 minutes.
  2. Meanwhile, combine the vinegar, ginger, mirin, soy sauce, and lime juice in a small bowl. Add the sesame oil, salt, and pepper. Slice the pork, drizzle with the vinaigrette, and serve with rice and broccoli.
