Green beans with smoked ham

Ingredients:

  • 900 g green beans, trimmed and halved
  • 3 tablespoons extra-virgin olive oil
  • 1 large onion, thinly sliced
  • 200 g smoked ham, cut into 1 cm cubes.
  • 3 tablespoons of apple cider vinegar
  • 0.5 cup chopped fresh parsley

Preparation:

  1. Bring a large pot of water to a boil and add salt. Add the green beans and cook until crisp-tender, about 7 minutes. Drain, rinse under cold water, and pat dry with paper towels; set aside. Refrigerate the beans, covered, for up to 4 hours.
  2. Heat the olive oil in a large saucepan or Dutch oven over medium-high heat. Add the onion, season with salt, and cook, stirring occasionally, until softened and golden, about 8 minutes. Add the ham and continue cooking until heated through, about 2 minutes. Stir in the vinegar and remove from heat.
  3. Add the green beans to the pan and stir to heat through. Add the parsley and season with salt and pepper to taste.
