Ingredients:
- 450 g penne pasta (feathers)
- 1/3 cup mayonnaise
- 3 tablespoons extra-virgin olive oil
- 3 tablespoons red wine vinegar
- 1 can (450g) giardiniera, drained and chopped
- 140 g provolone cheese, diced (1 cup)
- 140 g diced salami (1 cup)
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
Preparation:
- Bring a large pot of water to a boil and add salt. Add the pasta and cook according to package directions. Drain and let cool to room temperature.
- Meanwhile, combine the mayonnaise, olive oil, and red wine vinegar in a large bowl. Add the pasta and mix well. Add the giardiniera, provolone cheese, salami, parsley, and basil; mix well, season with salt and pepper to taste.
