Matzo Ball Ice Cream Sandwich

Ingredients:

• Broken matzo squares, whole grain bread can be used
• Vanilla ice cream

Preparation:

1. Break the matzo sheet into squares, dip in melted chocolate and freeze on a parchment-lined baking sheet until the chocolate hardens.
2. Place a scoop of vanilla ice cream between two sheets of chocolate-covered matzo and return to the freezer to set.
