Palmier Sugar Ears

Ingredients:

  • 0.5 cups of sugar
  • 2 tsp ground cinnamon
  • Zest of 1 orange
  • Half a package (500g) of frozen puff pastry (1 sheet), thawed

Preparation:

  1. Preheat oven to 200°C.
  2. Combine sugar, cinnamon, and orange zest in a bowl. Sprinkle 0.5 cups of the sugar mixture onto a clean work surface. Place the puff pastry on the sugar and sprinkle with the remaining sugar mixture.
  3. Roll the dough out with a rolling pin into an even rectangle about 0.3 cm thick, pressing in the sugar mixture.
  4. Fold the short sides of the rectangle so they meet in the middle. Place the rolls on top of each other and press lightly to secure. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  5. Cut the dough into 0.5 cm thick slices. Place the slices on 2 parchment-lined baking sheets and bake in a preheated oven for 12 minutes. Flip the cookies over and bake for another 6–7 minutes, until golden brown.
  6. Remove from oven and let cool on a wire rack before serving.
