Ingredients:
Masala spice mix
- 1/4 cup unsweetened coconut flakes
- 3 tablespoons of sugar
- 2 tsp. garam masala
- 1 teaspoon curry powder
- 0.5 tsp ground turmeric
Nuts
- Vegetable oil to grease the baking sheet
- Protein of 1 large egg
- 1 cup unsalted raw almonds
- 1 cup unsalted raw cashews
- 1 cup unsalted raw pistachios
- 1 cup unsalted raw walnuts
- 1 cup golden raisins
Preparation:
- Combine coconut, sugar, garam masala, curry powder, turmeric, if using, and 1.5 teaspoons salt in a small bowl and set aside.
- Preheat oven to 175°C. Lightly grease a rimmed baking sheet with vegetable oil.
- Nuts:
Place the egg white in a large bowl and whisk until foamy. Add the almonds, cashews, pistachios, and walnuts and stir to coat. Add the spice mixture and stir to coat.
- Spread the nut mixture evenly on the prepared baking sheet and bake, stirring occasionally, until golden brown, 15-20 minutes. Let cool on the baking sheet, stir in the raisins, and transfer to a large bowl.
