Ingredients:
- 110g unsalted butter, melted, plus extra for greasing the pan
- 1.5 cups premium flour + extra for dusting
- 0.5 cups of sugar
- 3/4 tsp baking soda
- 0.5 tsp fine salt
- 1/4 tsp ground cinnamon
- 1 large egg at room temperature
- 3 overripe bananas, mashed
- 1/3 cup sour cream
- 1 teaspoon pure vanilla extract
- 3/4 tbsp. semi-sweet chocolate granules
- 3/4 tbsp. chopped pecans
Preparation:
- Preheat oven to 175°C, grease and flour a 22x12cm metal loaf pan. Combine flour, sugar, baking soda, salt, and cinnamon in a large bowl.
- In a medium bowl, lightly beat the egg with a fork or whisk. Add the banana and stir until evenly distributed. Add the sour cream, vanilla extract, and melted butter. Combine the sour cream and banana mixture with the flour mixture and knead until smooth. Fold in the chocolate chips and pecans, distributing them evenly throughout the batter. Transfer the batter to the prepared pan and spread into an even layer.
- Bake until a toothpick inserted into the center comes out clean, 1 hour 5 minutes to 1 hour 10 minutes. Let cool in the pan on a wire rack for 20 minutes. Run a thin knife around the edges of the loaf to loosen it from the pan, and remove from the pan. Serve warm or at room temperature.
