Ingredients:
- 2 tbsp. high-quality olive oil
- 115 g softened butter
- 1 fresh bay leaf (available in the grocery store)
- 4 stalks of chopped celery with leaves (to save time, you can buy it already peeled, which will speed up the chopping process)
- 1 medium or large onion
- 3 Macintosh apples, quartered and finely chopped
- Salt, pepper
- 2 tbsp. special seasoning for poultry
- A quarter cup of finely chopped parsley leaves
- 8 cups poultry stuffing mix (diced bread with spices and herbs)
- 2-3 cups of ready-made chicken broth, sold in paper bags or in special soup containers
Preparation:
- Preheat oven to 190°C.
- Heat a large skillet over medium-high heat. Add olive oil and 4 tablespoons (60 g) of butter. Once the butter has melted, add the bay leaf and vegetables: celery, onion, and apples. Season the mixture with salt, pepper, and poultry seasoning and simmer for 5-6 minutes, until the vegetables and apples are tender. Add the parsley and stuffing cubes and mix well. Pour chicken broth into the mixture until it is moist, but not too moist.
- Grease muffin tins with butter and fill them with the mixture. You can use an ice cream scoop for this; it's very convenient. Set the bay leaf aside.
- Bake the muffins in the oven for 10-15 minutes, until they are golden brown. Transfer the finished muffins to a plate and serve at room temperature.
