Sweet and Salty Chocolate Granola

Ingredients:

  • 5 cups of oatmeal
  • 1 cup olive oil
  • 1 tbsp. natural maple syrup
  • 1 teaspoon coarse salt
  • 1 cup raw almonds
  • 1 cup raw walnut halves
  • 1 cup bittersweet chocolate pieces, such as Scharffen Berger 70%

Preparation:

  1. Preheat oven to 175°C. Line a baking sheet with parchment paper and set aside.
  2. In a large bowl, combine the oats, olive oil, syrup, and salt. Stir well to coat evenly. Spread the mixture on the prepared baking sheet and bake for 30 minutes, stirring once.
  3. Remove the baking sheet and stir in the almonds and walnuts. Bake, stirring occasionally, until the granola is evenly browned, another 25-30 minutes. Let cool completely, then stir in the chocolate chips. Store granola in a tightly sealed container for up to 2 weeks..
