Peach Tequila Cocktail

Ingredients:

  • 2 ripe white peaches, peeled, pitted and finely chopped
  • 1/4 cup silver tequila
  • 1/4 cup peach liqueur (recommended: Creme de Peche)
  • 1/4 cup lime juice
  • 2 tablespoons simple sugar syrup
  • Ice cubes
  • Peach pieces for decoration
  • Mint sprigs for decoration

Preparation:

  1. Place the peaches in a food processor and process until smooth. Strain through a sieve into a bowl.
  2. Combine peach puree, tequila, liqueur, lime juice and syrup in a blender and blend until smooth.
  3. Serve over ice in short glasses. Garnish each serving with a peach slice and a sprig of mint.
