Basic sofrito recipe topcook.tomathouse.com
Ingredients:
- 2 tbsp. l. olive oil
- 12 green onions, finely chopped, white and light green parts only
- 1 small yellow onion, finely chopped
- 1 large tomato, finely chopped (remove core)
- 0.5 cup chopped cilantro leaves
Preparation:
- Heat oil in a medium skillet over medium heat. Add green onions, onions, and tomatoes.
- Cook, stirring, until the onions are soft and golden and the tomatoes are tender, about 10 minutes. Add the cilantro; season with salt and pepper. Serve the sofrito warm or let it cool to room temperature.
