Ingredients:
Marinade/glaze
- 1/3 cup creamed honey
- 1/4 cup red miso paste
- 1/4 cup orange juice
- Red pepper flakes
Chicken
- 1 whole chicken, cut up
Preparation:
- Marinade/glaze:
In a small saucepan, combine honey, miso, orange juice, a few chili flakes and plenty of coarsely ground black pepper.
- Heat over medium heat, stirring, until the liquid thickens slightly to the consistency of a glaze, 6-8 minutes. Let cool to room temperature.
- Chicken:
Pour half the marinade into a zip-lock plastic bag, reserving the other half for the glaze. Place the chicken pieces in the bag with the marinade and seal. Let the chicken sit at room temperature for 1-2 hours.
- Heat a frying pan or half a grill.
- Remove the chicken from the bag and pat dry with paper towels. Place skin-side down over indirect heat and grill, covered, until the chicken pulls easily from the grill, about 15 minutes.
- Then flip and grill the other side until cooked through, another 15-20 minutes. Brush each chicken piece with a little of the remaining glaze one minute before it's done.
