Ingredients:
- 2 tbsp. l. rapeseed oil (canola)
- 1 onion, finely diced
- 4 cups fresh, peeled lima beans or two 10-ounce packages frozen lima beans
- 1 and 1/4 teaspoons sugar
- Salt and red pepper flakes
Preparation:
- In a small saucepan, bring about 3 1/2 cups water to a boil.
- Heat a medium skillet over medium-low heat and add oil. Saute the onion in the oil, gradually adding 1 cup of boiling water and stirring frequently, until the onion is soft and golden brown, 15-20 minutes.
- Add the lima beans and cook until they begin to soften, another 10 minutes. Add the sugar, a little salt and red pepper flakes, and the remaining water.
- Cover the pan and simmer the beans until tender, about 40 minutes. Using the back of a wooden spoon, gently mash one-third of the beans and stir. Serve warm.
