Ingredients:
- Cooking spray
- 1 (2.3 kg) cooked boneless ham
- 1/2 cup water or white wine
- 1 cup cherry jam
- 1 tbsp. prepared horseradish
- 1 full tablespoon light brown sugar
- 1/2 tsp ground cinnamon
- 1/2 tsp ground cumin
- 1/4 tsp ground cardamom
- 1/4 teaspoon salt
- Zest and juice of 1 lemon
Preparation:
- Preheat oven to 180°C. Line a roasting pan with foil and spray with cooking spray.
- Using a small, sharp knife, make cross-shaped cuts on the top and sides of the ham. Place the meat in a roasting pan, pour 1/2 cup of water or white wine into the bottom, and bake, covered with foil, for 45-60 minutes.
- For the glaze, combine the jam, horseradish, brown sugar, cinnamon, cumin, cardamom, salt, and lemon juice in a medium bowl. Transfer the cherry mixture to a small saucepan and bring to a simmer over medium heat. Cook until the glaze thickens slightly, 2-3 minutes. Remove from heat and stir in the lemon zest.
- Remove the ham from the oven and brush the surface with 1/4 cup of the glaze. Bake, uncovered, for about 20 minutes, or until heated through and a thermometer inserted into the center registers 140°F (60°C). Remove the ham from the oven, place it on a cutting board, and let it rest for 10 minutes. Then slice. Place the sliced meat on a serving platter and serve with the remaining glaze.
