Broccoli and Tomato Salad topcook.tomathouse.com
Ingredients:
- 1 head of broccoli
- 6-8 slices finely chopped cooked bacon
- 1/2 cup cherry tomatoes, halved
- 225 g sharp cheddar cheese, cut into very small pieces
- 1/2 cup chopped red onion
- 1/2 cup raisins (optional)
- 1 cup mayonnaise
- 2 tablespoons of table vinegar
- 1/4 cup sugar
- Salt and freshly ground black pepper
Preparation:
- Tear large leaves from the broccoli stalk. Cut off the tough core and wash the cabbage thoroughly. Separate the head into florets and cut into small pieces. Place in a large bowl. Add bacon bits, onion, raisins, if using, and cheese.
In a small bowl, combine the remaining dressing ingredients and mix well. Add the dressing to the salad and toss gently.
