Pizza Calzone with pepperoni topcook.tomathouse.com
Ingredients:
- 450 g pizza dough, divided into 4 pieces
- 1 can (800 g) diced tomatoes
- 1 tbsp tomato paste
- 2 tbsp. coarsely grated mozzarella cheese
- 340 g of thinly sliced pepperoni
- 1 tbsp olive oil, plus more for greasing
- 1/2 small onion, diced
- 1 crushed clove of garlic
- 1/2 teaspoon sugar
- Salt and crushed black pepper
- 4-6 fresh basil leaves (torn into pieces)
- Grated Parmesan to taste
- Flour for working with dough
Preparation:
- In a small saucepan, heat the olive oil over medium-low heat. Add the onion and sauté until translucent, 2-3 minutes. Add the garlic and sauté for 1 minute. Add the tomato paste and sauté for another minute.
Add diced tomatoes, sugar, salt, and pepper. Add basil leaves and bring the contents of the saucepan to a gentle simmer. Cook for about 15 minutes while you work with the dough.
- Preheat oven to 400°F (205°C). Roll out the dough on a lightly floured surface into four equal-sized circles. Top half of each circle with some mozzarella, then a few slices of pepperoni.
Fold in half to enclose the filling, then pinch the edges to create a nice seam. Place the calzone on a baking sheet, brush with olive oil, and sprinkle with grated Parmesan.
Bake until golden brown, 10-15 minutes. Serve with tomato sauce in a separate ceramic bowl.
